Trying to eat healthy on a budget and with little time can be difficult. So to solve one day of the week I am sharing with you a very simple, fast yet delicious recipe.
What you will need:
10 Medium Shrimp
Lemon Pepper
1 tablespoon of butter
2 Cups of Romaine Lettuce
1 Tomato
1 Small Avocado
Baby Carrots
1/2 Cucumber
(You can also add onion)
Make sure everything is washed and peeled. Cut in slices.
Mix clean baby carrots lettuce, tomato, cucumber and onion.
Wash and peal your shrimp.
In a sauce pan add a tablespoon of butter. Then add the shrimp and lemon pepper to your liking. Stir and cook for 5-6 minutes.
Slice Avocado and add to salad.
Finally add shrimp on top or mix together with veggies.
I like to squeeze a lemon on top of my salad, but it is your choice.
